The Undead Knight was a standalone enemy originally meant to be fought in the Pools of the Ancient Dead level of MediEvil. According to Jason Wilson's notes, the knight would be invulnerable to Daniel's weapons but would have grown weaker each time a shield in the level was obtained. Once all the shields were collected, Dan would have finally been able to kill off the knight, and would obtain the Dragon Potion as a result.[1]
