Mad Farmers were inhabitants of the Scarecrow Fields. Gallowmere's declining population had decreased a need for crops which drove these farmers mad.[2][2.1]

The mad farmers hide in haystacks throughout the fields. Upon Sir Dan's approach toward a haystack, they jump out and attack him with their pitchforks. Slashing them with the Broad Sword is one of the easiest ways to kill them.
Behind the scenes
MediEvil (1998 original)
In an early version of the game seen in a promotional trailer, the farmers came out of hay wagons instead of haystacks.
MediEvil: Resurrection
The farmers were replaced by Hay Monsters in MediEvil: Resurrection. These enemies are functionally the same, but have a drastically different appearance. The farmers from the original game were referred to as Hay Monsters in the official strategy guide for the game.
