Health Fountains, also known as Fountains of Rejuvenation, were springs of life energy found throughout the land whenever a necromancer resurrected the dead.

In MediEvil and MediEvil: Resurrection, if Sir Dan re-enters an area after it was already cleared, the Health Fountain will have replenished and he'll be able to use it again. Dan doesn't take any damage while standing in a fountain.
In MediEvil 2, if Dan re-enters a previously cleared area, the Health Fountain will not replenish and will remain drained. Dan will also take damage while standing in a fountain.
